Brent and I have been eating Annie's Mac and Cheese since we met. We always have a few boxes on hand for those nights when we are too lazy to go anywhere and want a hearty meal. However, it doesn't take a scientist to tell you that it isn't the healthiest meal. It may be better than Velveeta and Kraft since it is all natural, but it doesn't have a lot in the way of nutrients. So, Brent and I routinely fry up some protein and vegetables to be tossed in with the pasta. While Annie's isn't vegan, you could do the same with plain pasta or with a frozen vegan mac and cheese meal. It's also a great use for leftovers. Here are some of our favorite combinations:
1. Sharp cheddar mac and cheese with soy chorizo and onions.
2. White cheddar mac and cheese with fried tempeh, kale, and onions.
3. Mac and cheese with black beans and diced tomatoes or salsa.
4. Mac and cheese with fried tofu and mushrooms.
We've even been known to mix leftover baked beans, chorizo, pasta sauce, and noodles to clean out the fridge. As you can tell, I really love my whole meal in one bowl! Good thing we got amazingly giant bowls for Christmas this year!
